"Our philosophy at Seville Estate is to capture the fruit expression of this unique vineyard, in wine styles that show cool climate complexity and finesse".

There are three labels in the Seville Estate range: “The Barber” range (Chardonnay, Pinot Gris, Rosé, Riesling and Shiraz) are great introductory wines. The "Estate" range, (Shiraz, Pinot Noir and Chardonnay) are estate grown with the addition of our new vineyard plantings, being a blend of old and new vines. The Reserve range includes the Old Vine Shiraz and Cabernet Sauvignon, draw exclusively from the small planting of the original 34 year old vines while the Reserve Pinot Noir and Chardonnay are selected from the best parcels.

Seville Estate Old Vine
Reserve Shiraz

wineOld Vine Reserve Shiraz is one of Australia's finest examples of cool climate Shiraz. With its deep purple/red colour, spicy/berry fruit nose, an intense palate of pepper/spice characters, hints of cassis and soft vanillin oak, this wine is the flagship of the range. Seville Estate Old Vine Reserve Shiraz, while very approachable in its youth, is made with longevity in mind, and should reach its potential with 10 years cellaring.

Seville Estate Old Vine
Reserve Cabernet Sauvignon

wineThis wine has a dense colour with purple appearing at the edges. The nose has blackberry, charred oak and herbal aromas, followed through by an intense palate of pronounced fruit flavours and tobacco oak characters. A stylish Cabernet Sauvignon, drinking superbly now, although it will continue to develop with bottle age.

Reserve Pinot Noir

wineThe Reserve Pinot is a small selection of the best parcels of fruit of the vintage. This selection process involves choosing those barrels which exhibit the best 'Pinot character' with an extra level of concentration and depth.

Seville Estate Reserve Chardonnay
wineThe Reserve Chardonnay is also a barrel selection of the best parcels. The wine contains an added level of complexity and structure suited for cellaring. This is the pinnacle of Seville Estate Chardonnay.

Seville Estate Pinot Noir
Pinot Noir, one of the Yarra's most esteemed varieties, is produced at Seville Estate using classic Burgundian techniques. The aim in the winery is to create an earthy, elegant style with gamey, toasty flavours. Low cropping levels ensure the intensity of the fruit flavours, and maturation in French oak creates added complexity.

Seville Estate Chardonnay
wineSeville Estate Chardonnay is wholly barrel fermented and aged for 10 months in French oak, creating a wine with a beautiful balance of fresh melon/citrus fruit and nutty oak.

Seville Estate Shiraz
wineSeville Estate Shiraz is the first wine to be released with a combination of both old and new vineyard plantings. The blend of old and new vines creates a wine of great dimension. The first thing you notice is the telltale Yarra Valley white pepper character, which integrates with spice and cherry flavours. It is a full wine, with an excellent fruit and oak tannins.

‘The Barber’ Range
wineThe Barber’ range wines enable Seville to adopt 35 years of winemaking knowledge and experience into different styles and varieties and complimenting the Estate wines. “It’s interesting making diverse wine varieties and  styles, these wines allow Seville to expand our selection and add appeal.” Some of the wines include a Pinot Gris from Beechworth (inspired by Dylan’s 2 vintages in Alsace, France), Unoaked Chardonnay, Rosé, Late Picked Riesling, Shiraz/Cabernet and a Sangiovese.
