Our Estate wines are crafted from 100% estate grown fruit and are made on site in our winery. These elegant cool-climate varietal-focused wines are a reflection of our unique vineyard, surrounded by native flora and laden with deep mineral-rich red volcanic soils. Each release embodies the notion of terroir, painting a picture of our secluded corner of the Upper Yarra Valley with a stamp in time.
The 2023 vintage, was one of the coolest and wettest vintages on record, marked by low yields and producing fine-framed, elegant and aromatically intense wines.
La Nina delivered high rainfall throughout Spring and into December however, the New Year brought with it blue skies, drier conditions and mild Summer temperatures allowing steady flavour development and retention of natural acidity and freshness. Cool and windy conditions during flowering and low bud fruitfulness from the year before combined to bring light bunches and low yields.
The Estate Chardonnay is handpicked and gently whole bunch pressed. The juice is settled overnight in tank before being gravity fed to barrel the following day, taking full solids. Oak selection consists of a range of French oak coopers and formats, comprising 30% new.
Fermentation is allowed to occur spontaneously in barrel however, malolactic conversion is not encouraged. The wine remains in barrel on gross lees undisturbed for 10 months before being racked, filtered and bottled.
Vibrant, pure and expressive, this wine shows aromas of nectarine blossom, white peach pit, custard apple, fresh chamomile, flint and grapefruit pith, with a salty lick of preserved lemon.
This purity of fruit and florals carries through to the palate, balanced with well-integrated oak providing a hint of savoury spice, cardamom and walnut. Structurally defined by amazing natural acid drive, a subtle macadamia-like creaminess gives softness and completeness on the palate.

“Seville now just make one premium wine from estate-grown fruit. Whole-bunch pressed and barrel fermented in French puncheons (20% new). A bright green gold. Another in a long line of superb Seville Estate chardonnays. A full array of aromas including nashi, pear skin, orange blossom, lemon sherbet and flint. A nutty mealiness too. On the palate, this is powerful, restrained and structured, culminating in a saline, long and very satisfying finish. Top, top wine.”
