Situated on a ridge of red volcanic soil, tucked away from the concerns of modern day, is arguably one of Australia’s most beautiful wine destinations. Those who venture into the cool reaches of the Upper Yarra Valley immediately understand its appeal – just as Dr Peter and Margaret McMahon did when they purchased the bare site and founded this hidden estate in 1972.

While the beauty above the ground is immediately apparent, it is the magic that lies beneath that deserves attention. The soils at Seville Estate are extremely fertile red to grey volcanic, laid over a clay base. The colour of the earth is truly spectacular.

Our dry-grown vines are 100% cane pruned by hand, utilising vertical shoot positioning (VSP) to keep the canopy open and maximise ripening. Indigenous flora is encouraged throughout the property, allowing beneficial insects and birds of prey to naturally protect the crops.

The vines sit more than 200m above sea level. Because of our unique micro-climate, vintage arrives much later than other areas in the Yarra Valley. The elevation provides cooler temperatures that create an extended ripening period, allowing our berries to develop complex flavours and layered aromatics.

VARIETAL FOCUSED WINES EXPRESSIVE OF TIME AND PLACE

Our 50+ year old vines produce exceptional quality fruit, which is used to craft our most special wines. Our younger vines, which most wineries would not call ‘young’ at all, were planted in the late 90s to early 2000s. They offer incredibly complex fruit due to their vine maturity.

Viticulturist — Bryan Freedman

Bryan Freedman Seville Estate Upper Yarra Viticulturist
Growing up amongst the Yarra Valley’s rolling agrarian hills, Bryan Freedman has always been passionate about high-quality produce. His green thumb revealed itself at an early age, and it wasn’t long before he was pruning vines and learning about sustainable vineyard management from stalwarts of the region.

In 2023, following many years working on high profile sites across the Valley, including the storied Bastard Hill, Bryan took on the responsibility of Seville Estate’s vineyards. Here he is able to pursue his passion for sustainable agriculture, steering clear of herbicides in favour of natural practices that focus on developing soil nutrients and long-term vine health.

On the rare occasion that Bryan isn’t between two vines, you may find him pouring tastings at our Cellar Door and discussing some of his favourite wine; like the Reserve Cabernet Sauvignon. For him, it’s a varietal that showcases the uniqueness of the Seville Estate site and the complexity that can only be derived from mature vines.
