Our Estate wines are crafted from 100% estate grown fruit and are made on site in our winery. These elegant cool-climate varietal-focused wines are a reflection of our unique vineyard, surrounded by native flora and laden with deep mineral-rich red volcanic soils. Each release embodies the notion of terroir, painting a picture of our secluded corner of the Upper Yarra Valley with a stamp in time.
A benchmark year for Seville Estate. A cool, wet spring delayed budburst and flowering, pushing harvest later than usual. The season that followed was mild to warm, with very few days above 35°C. Conditions through summer and into harvest were ideal, producing wines of exceptional flavour and balance.
A long, even ripening period allowed each parcel to be picked at optimal maturity, and the extended harvest gave the winery time to give each batch the attention it deserved. 2017 stands as one of Seville Estate’s greatest vintages.
Fruit was handpicked early in the morning into small buckets, with bunch selection done in the vineyard. 80% de-stemmed into an open fermenter with 20% whole bunches, then chilled for a four-day cold soak before fermentation. Fermentation was wild with daily hand plunging. The wine was pressed off skins directly to seasoned (no new) French oak barrels (300L and 500L) for maturation. The final wine was gently racked and bottled without fining or filtration.

Crimson / red brick with flashes of purple. The nose is completely entrancing with dark red fruits, cloves, and mint dark chocolate. The classic site-specific white pepper note has melded into the fold, detectable, yet taken to a back seat. It’s still very juicy, but also displaying a number of dried herbs; oregano, peppermint and lemongrass.
The palate is notably smooth, with tannins still omnipresent but softened with age. Earthy and savoury flavours are most dominant, with berry-fruit woven intricately with warm spice. Very impressive. A showcase of cool climate Yarra Valley Shiraz in all its glory that offers collectors future cellar-ability, though is drinking superbly right now
